HAWG HEAVEN HEATING INSTRUCTIONS




The meat has been smoked and placed in plastic vacuumed sealed bags.



1.    Put a big pot of water on the stove and bring to a boil.  Make sure the bags do not sit on the bottom of the pot.  You can put a plate or rack in the pot, so the bag does not sit on the bottom.


2.    After the water comes to a boil, place the bags in the water and turn the temperature down so the bags will only simmer (NOT boil) in the water.  Remember, the bag is only PLASTIC.  It is not a boil bag.  There is a fine line before you could pop the bag.  If they start to swell up, turn down the temperature of the water!


3.    If the meat is thawed, it takes about 1 hour and 30 minutes to bring meat up to 165°.  Remember, the meat has already been cooked to temperature.  You’re only reheating it!


4.    When you are feeding a large group, only open 1 or 2 bags at a time so the meat stays moist and juicy.  The bags can stay in the hot water for several hours.  When you take it out of the bag, take a couple of forks and feather the meat until it’s pulled apart. 


5.    If you have bags left over, you can ice them in an ice bath until they’re cold and put them in the fridge or freezer and use them at a later date.  Use the boiling water method to heat the meat again.
